Contrairement \u00e0 une id\u00e9e re\u00e7ue, le sushi n&#8217;est pas d\u00e9fini par le poisson cru, mais par le riz vinaigr\u00e9, le <strong><em>shari<\/em><\/strong>.<\/p>\n\n\n\n<p>Un <em>shari<\/em> parfaitement pr\u00e9par\u00e9 est ti\u00e8de, l\u00e9g\u00e8rement collant et assaisonn\u00e9 avec justesse de vinaigre de riz, de sucre et de sel. C&#8217;est l&#8217;alchimie entre le riz, souvent ti\u00e8de, et la garniture, souvent froide, qui cr\u00e9e l&#8217;\u00e9quilibre id\u00e9al en bouche.<\/p>\n\n\n\n<p>Pour l&#8217;amateur, la v\u00e9ritable \u00e9valuation d&#8217;un restaurant de sushis commence par la <strong>texture<\/strong> et la <strong>temp\u00e9rature<\/strong> de son riz.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-text-color has-link-color wp-elements-44b007f4f2aa451b5478916dbaad75f3\" style=\"color:#f84b76\">Le Nigiri, l&#8217;\u00c9talon de la Puret\u00e9<\/h3>\n\n\n\n<p>Si les <em><strong>makis<\/strong><\/em> (rouleaux) et les <em><strong>california rolls<\/strong><\/em> sont populaires, c&#8217;est le <strong><em>nigiri<\/em><\/strong> qui incarne la forme la plus pure et la plus difficile de cet art.<\/p>\n\n\n\n<p>Le <em>nigiri<\/em> est une simple tranche de poisson (<em><strong>neta<\/strong><\/em>) pos\u00e9e sur une petite boule de riz (<em><strong>shari<\/strong><\/em>). Sa perfection d\u00e9pend de trois facteurs cruciaux :<\/p>\n\n\n\n<ol start=\"1\" class=\"wp-block-list\">\n<li><strong>Le tranchage du <em>neta<\/em> :<\/strong> La lame du couteau (<em><strong>hocho<\/strong><\/em>) doit \u00eatre si pr\u00e9cise que la tranche de poisson conserve sa structure et sa texture, fondant litt\u00e9ralement sur la langue.<\/li>\n\n\n\n<li><strong>La juste quantit\u00e9 de riz :<\/strong> Elle doit \u00eatre adapt\u00e9e \u00e0 la taille du poisson, permettant de manger la pi\u00e8ce en une seule bouch\u00e9e, sans d\u00e9s\u00e9quilibre.<\/li>\n\n\n\n<li><strong>Le Wasabi :<\/strong> Il est traditionnellement d\u00e9j\u00e0 plac\u00e9 par le ma\u00eetre sushi, entre le poisson et le riz. Son r\u00f4le est d&#8217;apporter une pointe de piquant et d&#8217;exhausser les saveurs du poisson.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading has-text-color has-link-color wp-elements-3f09d10ac81014e62af65e7e85a79da2\" style=\"color:#fa517b\">L&#8217;\u00c9tiquette du D\u00e9gustateur Averti<\/h3>\n\n\n\n<p>En tant qu&#8217;amateur, conna\u00eetre l&#8217;\u00e9tiquette permet de rendre hommage au travail du <em><strong>Itamae<\/strong><\/em> (ma\u00eetre sushi) :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Le Nigiri se mange \u00e0 la main :<\/strong> Contrairement aux id\u00e9es re\u00e7ues, il est parfaitement acceptable (et m\u00eame pr\u00e9f\u00e9rable) de saisir un <em><strong>nigiri<\/strong><\/em> avec les doigts.<\/li>\n\n\n\n<li><strong>Tremper le c\u00f4t\u00e9 poisson :<\/strong> Lorsque vous utilisez de la sauce soja, trempez seulement l\u00e9g\u00e8rement le c\u00f4t\u00e9 poisson. Si vous trempez le riz, celui-ci s&#8217;imbiberait trop, s&#8217;effondrerait et masquerait toutes les saveurs.<\/li>\n\n\n\n<li><strong>Le Gingembre (<em>Gari<\/em>) :<\/strong> Le gingembre marin\u00e9 ne se mange pas avec le sushi.
